Makes approximately 6 servings
Preparation time is approximately 10 minutes
Cooking time is approximately 40 minutes
ingredients
1 large onion, chopped
8 carrots ( about 500g ) scrubbed and chopped
1.2 litres vegetable stock
100g soft cheese
Pinch of black pepper
How to make your Simple Carrot Soup
Put the onion and carrots into a large saucepan, then pour in the stock.
Bring to the boil, reduce the heat, partially cover, and simmer for about 25 minutes, until the carrots and onion are soft.
Use a stick blender to puree the mixture ( take care as soup is HOT )
Add half of the soft cheese and blend again until cheese is mixed in.
Reheat gently and then serve, topped with the remaining cheese and a pinch of black pepper.
Enjoy with a slice or two of wholemeal bread.
HINTS & TIPS
This recipe is great for batch cooking!
'Lighten up' remove the soft cheese and serve with wholegrain bread
Pop into a thermos flask and include as part of a packed lunch.
