This tray bake is very versatile and can be used as a base for so many dishes!
Makes approximately 4 servings
Preparation time is approximately up to 10 minutes
Cooking time is approximately 20 minutes
Ingredients
4 – 5 assorted peppers
Block of halloumi cheese
Olive oil
Garlic
Half a lemon
Oregano or mixed herbs
Salt & pepper
Basil (optional)
Cherry tomatoes (optional)
How to do make Roasted peppers and halloumi tray bake
1. Preheat oven to 200C
2. Chop the peppers & halloumi (approx. 2cm by 2cm)
3. In a small bowl mix the lemon juice, garlic & oil. Spoon over the peppers & cheese and pop it in the oven.
4. Cook for 20 minutes (if you are using the cherry tomatoes and basil add them both, 5 minutes before the end of the cooking time).
HINTS & TIPS
Leftovers can be kept in the fridge, in a bowl covered in cling film or in an airtight container, for 2 - 3 days.
Why not stir into some leftover cous cous for a healthy lunch? Or add to a wrap with some salad?
