Tender pieces of marinated chicken cooked on the BBQ or grill for a sweet and smokey flavour. Children love building the kebabs and then eating the rainbow vegetables. Serve with bread wraps or rice.
Makes approximately 4 servings
Preparation time is approximately 15 minutes, plus marinating time
Cooking time is approximately 15-20 minutes
Ingredients
Marinade:
2 tablespoons of olive oil
2 cloves of garlic peeled & minced
3 tablespoons of soy sauce (gluten free if necessary)
3 tablespoons of runny honey
Skewers:
4 chicken breasts, cut into cubes
1 red pepper, cut into chunks
1 yellow pepper, cut into chunks
1 courgette, cut into chunks
1 onion, cut into chunks
1 tablespoons of sesame seeds
Small bunch of chopped coriander
How to make Rainbow Chicken Skewers
Put all marinade ingredients in a large plastic food bag, add chicken, close bag and place in fridge for at least 2 hours - or up to 1 day.
Soak skewers in water for 1 hour if you using wooden ones to prevent them burning.
Preheat grill to high setting. Assemble skewers by adding chicken pieces and rainbow vegetables.
Grill or BBQ for 15-20 mins, turning occasionally until chicken is cooked through.
