Rainbow Chicken Skewers

Tender pieces of marinated chicken cooked on the BBQ or grill for a sweet and smokey flavour. Children love building the kebabs and then eating the rainbow vegetables. Serve with bread wraps or rice. 


Makes approximately 4 servings

Preparation time is approximately 15 minutes, plus marinating time

Cooking time is approximately 15-20 minutes




Ingredients


Marinade:

2 tablespoons of olive oil

2 cloves of garlic peeled & minced

3 tablespoons of soy sauce (gluten free if necessary)

3 tablespoons of runny honey


Skewers:

4 chicken breasts, cut into cubes

1 red pepper, cut into chunks

1 yellow pepper, cut into chunks

1 courgette, cut into chunks

1 onion, cut into chunks

1 tablespoons of sesame seeds

Small bunch of chopped coriander


How to make Rainbow Chicken Skewers

  1. Put all marinade ingredients in a large plastic food bag, add chicken, close bag and place in fridge for at least 2 hours - or up to 1 day.

  2. Soak skewers in water for 1 hour if you using wooden ones to prevent them burning.

  3. Preheat grill to high setting. Assemble skewers by adding chicken pieces and rainbow vegetables.

  4. Grill or BBQ for 15-20 mins, turning occasionally until chicken is cooked through.
