Fun and tasty tarts that the kids will love to make as much as eat!
Makes approximately 20 tarts
Preparation time is approximately 45 minutes
Cooking time is approximately 15 minutes
Ingredients
250g plain flour
125g butter, chilled & diced
1 egg, beaten
1teaspoon of vanilla extract
1teaspoon of cold water
100g jam
Pinch of salt
Brush of milk
How to make mini fruit tarts
Rub flour, butter & salt in together with fingertips until they resemble breadcrumbs (Can use a food processor if preferred).
Add egg, vanilla & water and stir together into a dough.
Bring dough together into one large ball adding more water if necessary. Take care not to kneed too much.
Wrap dough in clingfilm and chill in the fridge for 30 mins.
Pre-heat oven to 180C. Grease tin with butter and dust with flour.
Unwrap and roll pastry to depth of £1 coin. Cut out with fluted cutter to fit tart tins.
Dollop 1 teaspoon of jam in the centre of each pastry circle. Top with slices of fruit. Brush outside of pastry with a little milk.
Bake in oven for 15 mins until centre is bubbling slightly. Allow to completely cool before tasting.
