Its official name is Tzatziki but that makes it sound too complicated! This is a delicious yogurt and cucumber dip that can be served with carrots and cucumber for a lovely snack. Or as a dressing for a kebab!
Makes approximately 6 - 8 servings
Preparation time is approximately 10 minutes
Ingredients
1/2 cucumber, grated
200g Greek yogurt
1 clove garlic, chopped (lazy garlic is fine!)
Handful of mint leaves, chopped
Salt
Lemon juice (optional)
How to make GREEK YOGURT AND CUCUMBER DIP
Coarsely grate the cucumber (some recipes say to remove the skin and seeds but we add it all!) It will be quite watery so try and squeeze out an excess water if you can (you can do this with your hands, in a strainer or by wrapping in a clean tea towel and squeezing!)
Add the cucumber, garlic and mint to the yogurt and mix well.
Leave in the fridge for 30 minutes to let the flavour sink into the yogurt.
To Serve: You can add a squeeze of lemon for extra zing if you'd like.
HINTS & TIPS
This is a delicious dip when served with chopped carrots, cucumber and peppers.
Use low fat yogurt for a low calorie alternative to 'Lighten up'.
It is also great as a dressing with the lamb lollipops!
