Cheese on toast with a taste of luxury and a great way to use up leftover bread!
Makes approximately 2 servings
Preparation time is approximately 5 minutes
Cooking time is approximately 10 minutes

Ingredients
350g cheddar cheese, grated
100ml milk
1 tsp Worcestershire sauce or Henderson's relish
4 tablespoons of plain flour
2 tablespoons of English mustard
3 egg yolks
2 slices bread, toasted (or any bread that needs using up)
Few drops Tabasco (optional)
Alternative cheat option! Instead of making a sauce with the flour, milk and eggs, you can top with a mix of 2 tablespoons of mayonnaise, mustard and cheese!
How to make Welsh rarebit
1. Preheat the grill to high.
2. To make the rarebit, gently melt the cheese in a pan, then add all the remaining ingredients, carefully stirring. Cook for 2 - 3 minutes then pour onto a lined tray and chill.
3. Toast the bread, then top with the rarebit and grill for 1 to 2 minutes until bubbling and golden.
Serve with a green salad and some tomatoes.
HINTS & TIPS
This is a great way to use any leftover bits of dry cheese which go soft again when cooked.
You can use frozen bread but it may take a little longer to cook. Or any bread or rolls you would like to use up!
Add ham under the cheese mix for some extra protein.
