Fakeaway: Stir-fry Noodles

No need to grab a takeaway when you can create something equally delicious at home!


Makes approximately 2 – 3 servings

Preparation time is approximately 5 minutes

Cooking time is approximately 10 minutes





Ingredients


2 to 3 tablespoons rapeseed oil

300g fresh or dry noodles

4 to 5 cups of mixed stir-fry ingredients (red and green peppers, mushrooms, cabbage, bok choi/pak choi, carrots, mangetout, sweetcorn)

1/2 teaspoon salt

Soy sauce to taste

1 to 3 garlic cloves, thinly sliced (optional)

1 tablespoon of sweet chilli sauce (optional)

Chicken thighs, pork, beef, and tofu can be used for added protein (optional)



How to make Stir-Fry Noodles


  1. Prepare the noodles according to package instructions. Drain the noodles and rinse with cold water.

  2. Heat the wok/frying pan and add 1 tablespoon of oil. If you're using garlic (or other aromatics) add now. Stir-fry for 10 to 20 seconds on a high heat.

  3. Stir-fry any meat that you are using: Sear for 1 minute without stirring, then stir-fry another minute mixing with the other ingredients.

  4. Add the vegetables and salt and stir-fry for 1 - 2 minutes until everything is nearly cooked.

  5. Add the cooked noodles.

  6. Swirl in any liquid sauce ingredients, like soy sauce/sweet chilli sauce. Stir and toss the noodles and other stir-fry ingredients to coat evenly and cook for a further minute.

  7. Serve immediately.


 

HINTS & TIPS


You can also add leftover chicken or turkey to this recipe. Just ensure it is heated throughout before serving.
