Homemade chicken goujons are a nutritious alternative to the shop bought variety and this recipe is a great one to get the kids involved in making. They are perfect for freezing too!
Makes approximately 4 servings
Preparation time is approximately 5 minutes
Cooking time is approximately 25-30 minutes
Ingredients
125g oats
4 boneless and skinless chicken breasts, cut into strips
50 - 100g plain flour (gluten free if necessary)
3 - 4 free-range eggs, beaten
2 tablespoons of olive oil
How to make Crispy OATY Chicken Goujons
Preheat oven to 200C.
Place oats, flour (seasoned with salt and pepper) and beaten egg in separate shallow bowls.
Coat each strip of chicken in flour then egg and finally the oats or breadcrumbs making sure they are evenly coated. Kids love this part - messy but fun!
Place on lined baking sheet, drizzle with olive oil and bake for 25-30 mins until they are golden brown and the chicken is cooked through.
To serve: Serve with a colourful salad, rice & veg or mash and sweetcorn! They can even be added to a salad wrap for a tasty lunch.
HINTS & TIPS
These are perfect for freezing. Once they have cooked & cooled, pop into an airtight container / freezer bag and freeze. Defrost thoroughly and reheat in the oven until piping hot (do not refreeze).
