Perfect dessert to impress family over Christmas with not many ingredients! Make sure you watch the video - Bianca talks through each step to make it easy.
Makes approximately 10 - 12 servings
Preparation time is approximately 15 minutes
Cooking time is approximately 40-45 minutes
Ingredients
For the sponge
6 eggs
150g caster sugar
50g cocoa powder
For the icing
120g butter
120g dark cooking chocolate
120g icing sugar
300g double cream for the filling
Icing sugar to decorate
How to make your Christmas YULE LOG
For the sponge
Preheat oven to 180C
Break eggs into bowl, add sugar and whisk until it changes colour and is quite thick. Sieve cocoa powder and 'fold' into mix.
Place greaseproof paper on a baking tray and pour the mixture onto it.
Cook for 15 - 20 minutes (until bouncy) then turn out onto greaseproof paper and cover loosely with the tray (to keep it moist). Allow to cool.
For the icing
1. Whisk the double cream until thick.
2. In a separate bowl, mix the butter and icing sugar. Be patient - it takes a while!
3. Add the melted chocolate and stir (it can be melted over a saucepan of warm water)
Compiling the log....
Turn out the sponge and trim the sides so they are even.
Spread with the double cream.
Use the greaseproof paper to help you roll into a log (lengthways)
Spread with the icing and use a cocktail stick/fork to make grooves
Allow to set in the fridge for a couple of hours per serving
