This is also known as a remoulade or French coleslaw. Absolutely delicious as a side dish!
Makes approximately 4 - 6 servings
Preparation time is approximately 5 - 10 minutes
Ingredients
1 small celeriac
3 teaspoons of mustard
Juice from 1 lemon (or 3 tablespoons of lemon juice)
7 tablespoons of mayonnaise
Salt & pepper
Sprinkle of fresh parsley, chopped (optional)
How to make Celeriac Slaw
1. Mix the mayonnaise, lemon juice, salt, pepper and mustard in a large bowl.
2. Peel the celeriac using a sharp knife.
3. Coarsely grate the celeriac and add immediately to the dressing to prevent it from
dis-colouring.
4. Mix to completely coat the celeriac, check the seasoning and adjust if necessary.
HINTS & TIPS
'Lighten up' this recipe with using low fat mayonnaise combined with low fat yogurt.
Reducing the amount of the combined low fat mix by half can also help to 'Lighten up'.
