These carrot cake cookies are a modern take on the classic carrot cake and make a healthy lunchbox treat or after school snack.
Makes approximately 12 cookies
Preparation time is approximately 10 minutes
Cooking time is approximately 15 minutes
Ingredients
140g icing sugar
Juice of 1 orange
350g wholemeal plain flour
1/2 teaspoon baking powder
1 teaspoon mixed spice & cinnamon
150g butter, softened
150g light brown sugar
1 egg, beaten
200g grated carrot
How to make your carrot cake cookies
Heat the oven to fan 180C.
In a large bowl combine flour, baking powder and spices.
In a separate bowl beat together sugar and butter until creamy. Beat in egg and carrot.
Add to dry ingredients and mix together.
Form into 12 ball shaped cookies, flatten slightly and place apart on lined baking tray.
Bake for 15 mins. Mix together icing sugar and orange juice. Drizzle over cooled cookies.
