Bruschetta

Delicious served as a light lunch or with stuffed mushrooms, lasagne or our stuffed peppers!

Ingredients


Bread (french stick, ciabatta, tiger or any bread available!)

1/2 red onion, finely chopped

1 garlic clove, finely chopped

Chopped tomatoes

Handful of basil

4 tomatoes

Drizzle of balsamic vinegar

Drizzle of olive oil

Salt & pepper




BRUSCHETTA

  1. Preheat oven to 180°C (Gas mark 4 or 160°C for a fan oven) or preheat the grill.

  2. Mix the bruschetta ingredients together (tomatoes, basil, garlic, balsamic vinegar, salt, pepper and olive oil).

  3. Drizzle the bread with olive oil and cook in the oven or under the grill for a few minutes until toasted.

  4. Add the tomato mix on top and serve.

 

HINTS & TIPS


Cheese can be added on top if desired.
