A delicious family meal that is easy to cook and a real family favourite!
Makes approximately 4 servings
Preparation time is approximately 10 minutes
Cooking time is approximately 10-15 minutes
Ingredients
500g pasta (fusilli or penne are good)
1 onion – finely chopped
1 jar green pesto
2 160g tins of tuna - drained
1 head of broccoli – cut into florets
2 tablespoons of olive oil
25g butter
Chopped fresh dill or parsley to decorate (optional)
Parmesan (optional)
Salt & pepper
How to make Tuna Pesto Pasta
Boil enough water in a large pan to cover the pasta and add the dried pasta and cook according to the instructions on the pasta packet (approx.10 mins).
Add the chopped onion to a pan with the oil and fry for 3-5 mins.
Half-way through the pasta cooking, add the broccoli florets to the pasta pan (or steam separately)
Add the two tins of tuna and jar of pesto to the fried onion, stir these and heat through.
Drain the pasta and return it to the pan. Add the onion, tuna and pesto and combine.
To Serve: Serve with a side salad or baby tomatoes. Cheese lovers can add grated Parmesan too!
HINTS & TIPS
This can be made with green beans instead of broccoli or baby tomatoes (tomatoes don’t need cooking but can be chopped and heated with the tuna and pesto towards the end of cooking time).
Try this with red or another type of pesto.
