Quick and easy microwave banana pudding to use up those over ripe bananas loitering in the fruit bowl!
Makes approximately 4-6 servings
Preparation time is approximately 25 minutes
Cooking time is approximately 30-35 minutes
ingredients
100g butter, softened, plus extra for greasing
2 ripe bananas
100g light muscovado sugar (or any caster sugar if you don’t have this)
100g self-raising flour (Gluten free if necessary))
2 teaspoons of ground cinnamon
2 eggs
2 tablespoons of milk
To Serve: Toffee sauce and/or ice cream (or dairy free ice cream if required!)
how to make your banana pudding
Put the butter into the microwaveable dish and microwave on high for approximately 30 seconds until melted.
Mash 1½ bananas into the melted butter then add the sugar, flour, cinnamon, eggs and milk. Mix together well.
Slice the remaining banana over the top, then return to the microwave and cook on high for 8 minutes until cooked through and risen.
