What we're making
Summery Turkey Bolognese - A lighter and cheaper version of a family classic. Try serving with grated courgette instead of spaghetti for a healthy and gluten free alternative.
What you'll need
1 tbsp olive oil
500g turkey thigh mince
1 celery stick, sliced
1 white onion, diced
1 red pepper, chopped
1 yellow pepper, chopped
1 garlic bulb, peeled and crushed
1tbsp tomato puree
1 can tinned tomatoes with herbs
Handful of torn Mozzarella cheese (optional)
1 deep frying pan with lid
1 chopping board
1 sharp knife
How to do it
1. Heat olive oil in pan. Gently cook onion, garlic, fennel and celery until golden.
2. Add turkey mince and brown. Add red and yellow peppers and cook for further 2-3 mins.
3. Add tomato puree, tinned tomatoes and water. Season with salt & pepper and gently simmer for 25 mins.
4. Served with spaghetti (or grated courgette), grated mozzarella cheese and salad.
