What we're making
Rainbow Chicken Skewers - Tender pieces of marinated chicken cooked on the bbq or grill for a sweet and smokey flavour. Children love building the kebabs and then eating the rainbow vegetables. Serve with bread wraps or rice. Vegetarian - Try Halloumi cheese or tofu pieces instead of chicken.
What you'll need
2tbsp olive oil
2 cloves garlic
2 cloves of garlic peeled & minced
3 tbsp soy sauce
3 tbsp runny honey
4 chicken breasts cut into cubes
1 red pepper cut into chunks
1 yellow pepper cut into chunks
1 courgette cut into chunks
1 onion cut into chunks
1 tbsp sesame seeds
Small bunch of chopped coriander
Metal or wooden skewers.
Large plastic food bag
How to do it
1. Put all marinade ingredients in a large plastic food bag, add chicken, close bag and place in fridge for 2 hours - or up to 1 day.
2. Soak skewers in water for 1 hour if you using wooden ones to prevent them burning.
3. Pre-heat grill to high setting. Assemble skewers by adding chicken pieces and rainbow veg.
4. Grill/bbq for 15/20 mins until chicken is cooked through.
