chicken roast tray

One Tray Chicken Roast Dinner - This one dish meal is comforting and delicious. It uses cheaper cuts of meat to keep the cost down and saves on the washing up! Feeds a family of 4-6. 

What you'll need


12 skin of chicken thighs. 

1tbsp olive oil

1 onion, diced

2 parsnips, chopped (can be frozen)

500g new potatoes, quartered

500g small carrots, chopped ( can be frozen)

2 large leeks, thinly sliced

Sprigs of fresh thyme, parsley (optional)

Salt & Pepper



1 large roasting tray

Chopping board

Sharp knife

Frying pan

How to do it

1. Set the oven to 160C. Heat half the oil in the frying pan and add the chicken thighs, skin side down in 1/2 batched. Cook until skin golden brown. Take them out pan and set aside.

2. Put carrots, onions, parsnips, potatoes and leeks in the roasting tray and drizzle with remaining olive oil. Sprinkle with thyme and parsley. Season well and put chicken thighs on top.

3. Roast in oven for 30-40mins until veg is soft and golden. Serve with mustard and gravy.
