Cosy cottage pie - this is a great recipe for batch cooking and using up vegetables that need eating. Can be topped with white or sweet potatoes and is comfort eating at its best.

What you'll need
500g beef mince
1 onion, diced
2 cloves of garlic, crushed & diced
2 carrots, peeled & diced
1 courgette, diced
2 handful of frozen peas
2 tbsp tomato puree
500ml beef stock
2 tbsp Worcestershire sauce (optional)
500g potatoes ( white or sweet), mashed
1 tbsp olive oil
Deep frying pan
Large oven proof dish
How to do it
1. Add oil to frying pan and gently fry onions and garlic for 5 mins until softened. Add beef mince and cook until browned.
2. Add carrots, courgette and peas to pan along with tomato puree. Stir and add beef stock and simmer for 20 mins until carrots soften.
3. Add beef mixture to oven-proof dish and top with mashed potato. Cook in oven for 25 mins until bubbling.
