Carrot cake cookies

Carrot cake cookies - these are a modern take on the classic carrot cake and make a healthy lunchbox treat or after school snack. Perfect for some Easter baking. 

Recipe makes approx. 12 cookies.

What you'll need


  • 140g icing sugar
  • Juice of 1 orange
  • 350g wholemeal plain flour
  • 1/2 tsp baking powder
  • 1 tsp mixed spice & cinnamon
  • 150g butter, softened
  • 150g light brown sugar
  • 1 egg, beaten
  • 200g grated carrot


How to do it

1. Heat the oven to fan 180C.

2. In a large bowl combine flour, baking powder & spices.

3. In a separate bowl beat together sugar & butter until creamy. Beat in egg and carrot. Add to dry ingredients and mix together.

4. Form into 12 ball shaped cookies, flatten slightly and place apart on lined baking tray.

5. Bake for 15 mins. Mix together icing sugar & orange juice. Drizzle over cooled cookies.
